Our hot cross buns have the tasty addition of California prunes which marry extremely well with the orange and spices such as cinnamon, cardamom and ginger. We also use green tea in this recipe which gives an added layer of flavour to the hot cross buns that can be perfectly served lightly toasted with butter.

California Prune Rainbow Cake

Depending how ambitious you are, this cake can be made with three or six tiers. By gradually changing the colour of the cake in each tier you will create a rainbow look for an Ombre effect.

The California prune rainbow cake has California prunes added into the cake mix itself as well as California prune puree between each layer. This helps to reduce the amount of buttercream needed and therefore lowers the amount of sugar in the cake.
