Ham Glazed in California Prune Juice and Ginger

We all love Christmas but it can be a terrible time for our diets, lots of rich food, too much sugar and the constant temptation to overeat. While there is a time and a place for a strict diet, Christmas is a time to relax the rules a little and treat yourselves, treat being the operative word. A treat is something that is occasional, been worked for and indulgent. When a treat becomes an everyday occurrence then it is no longer a treat!

The benefit of including California prunes in your diet over Christmas is two-fold.

Firstly, California Prunes brings nutritional benefits to your diet. We published the “Prune It” eating plan at the beginning of 2017 which uses prunes to replace some of the fat and sugar in recipes, therefore reducing calorie count, but also helping those following the plan to feel full for longer, encouraging healthy portion sizes. Couple that with the high fibre content and vitamin content of our prunes, and you have a very helpful ingredient to add to your recipes.

The other benefit of our prunes is that they are rich, tasty and add a depth of flavour. Just ask our Brand Ambassador Paul A Young who regularly includes California Prunes in his chocolates that he sells through his shops in London.

Prunes add a subtle sweetness and body to a dish and with a quality ingredient like California Prunes, you can be confident that their flavour enhance rather than overpower the other layers of flavour you have worked hard to incorporate.

In addition to the dishes on our recipe pages we also have this recipe for Vegan brioche Christmas trees and stars with California Prunes to tempt you with. They will look amazing on a Christmas party table and taste delicious too.

For the dough:

  • 7g instant yeast
  • 120ml plant milk (e.g. rice, almond, oat)
  • 85g brown sugar
  • ½ cup pumpkin puree
  • zest from ½ orange
  • ¼ tsp cinnamon
  • 350g plain flour
  • 3 tbsp coconut oil, melted
For the filling:

  • 50g California Prunes
  • 30g dried cranberry
  • 30g dates
  • 30g dried figs
  • 90ml orange juice
  • 1 tbsp brandy
  • zest from ½ orange
  • 1 tsp lemon and lime zest

For the dough:

Mix the yeast, warm milk, sugar and about 1/3 of the flour. Set aside for 10-15 minutes. Mixture should rise a bit.

Add the pumpkin puree to the yeast mixture, sift in the rest of the flour and cinnamon and add the orange zest. Knead until dough is no longer sticky, about 10 minutes.  Add coconut oil and knead for another 1-2 minutes. Cover the bowl and set aside until the dough has doubled in size, about 1-1 ½ hours.

For the filling:

Heat the orange juice and brandy together until just warm and pour over prunes, cranberries, dates and figs. Leave for at least 30 minutes to soak, or overnight. Add citrus zest and blend until smooth.

Roll the dough into a rectangle 20 x 40 cm. Spread the filling on half of the dough, fold over the other half and roll out a bit more.

Cut out Christmas tree and circle shapes, make incisions up both sides of the pastry, leaving about an 1 cm uncut up the centre (or a small circle if you’re making a star). Twist each strip of pastry then place down. When done let the brioche rest for another 20-30 minutes. Brush with warm plant milk and bake for about 15-19 minutes until golden in 170C/355F.

We wish you a delicious and nutritious Christmas!
